Sweet caramelized onions, earthy beets, and juicy mango might not sound like a match made in heaven. One bite and you’ll be hooked. This dish is vibrant, comforting, and just a little exotic, making it perfect for when you want something different but deeply satisfying.
Ingredients

2 large white onions, diced

few sprigs of fresh thyme

some sort of butter and olive oil

1 medium raw beet, peeled and thinly sliced

Salt & pepper to taste

1 ripe mango, cut into bite-sized chunks

Cooked jasmine rice

Cooked brown lentils
How to Make It

Start the Onions Heat oil in a large skillet over medium heat. Add the diced onions and a generous sprinkle of thyme. Let them cook for 5 minutes, stirring occasionally.

Add the Beet Toss in the thinly sliced beet. Continue cooking, stirring now and then, until the onions turn golden and the beet softens, about 10–12 more minutes. Season with salt and pepper.

Warm the Mango Turn off the heat and throw in the mango chunks

Serve & Savor Spoon the mixture over a bed of jasmine rice and brown lentils, letting all those sweet and savory juices soak in.
